Chicken Pocket With Mango N Cheese

This recipe is come from one of my friend...... I had try the Chicken with Ham and Cheese before but not with Mango. Invented two version of this meal, one is using Bread Crumbed Chicken while the other is Grilled and both tasted GREAT.


Ingredients: (Serves 2)
4 Pieces Of Chicken Breasts
3 Slices Of Cheese
1 Fresh Mango(cut into thin strips)
2 Egg(lightly beaten)
1 Cup of Bread Crumbs
Some Cornflour for dusting

Methods:
1. Divide the chicken breasts into 2 each if you prepare to make both grill and deep fry.
2. First, wash and pat dry the chicken breast then cut a pocket on the side of of it to slot in the mango and cheese.
3. Next coat the chicken breast with cornflour then dip it into egg mixture and lastly coat it with bread crumbs and deep-fry it in hot oil for 2-3 minutes on each side until golden brown.
4. Repeat the rest until all are done then sever it with fries and fruit salad.


Note: If doing the grill methods, just season the chicken breast with pepper and cooking wine then slot in the cheese and mango and pan-fry it with some olive oil. Posted by Picasa

Orange Mousse Cup

Find this Orange Moose Cup recipe very interesting and easy to do so I just give it a try. If you are a citrus fans than this really suits you, but if you are not. Maybe you can replace it with Mango or Strawberry Moose. So next time when you squeeze orange juice, remember to keep the orange case for this......


Ingredients:
4 Medium Size Orange
1 Egg
25g Caster Sugar
70ml Fresh Orange Juice
10ml Lemon Juice
1 Tablespoon Grated Orange Rinds
100ml Whipping Cream
5g Gelatin
1 Tablespoon Water

Preparation:
1. Cut the top of the orange off and scoop out the flesh and set aside the case.
2. You can reserve some of the orange juice for later use.
3. Mix gelatin with water and place it over a plate of warm water until it dissolves.

Methods:
1. Beat egg and sugar until creamy white. Add orange juice, lemon juice and orange rinds and mix well.
2. Whip the whipping cream until soft peak then add it into step 1 mixture.
3. Pour gelatin mixture and mix well to become orange mousse.
4. Pour the mousse mixture into orange cup and refrigerate about 3 to 4 hours and serve.

Notes: If you are not an citrus fans, you can always replace it with Mango, Strawberry, Banana or etc... that you prefer. Posted by Picasa


Pork Cutlets And Caramelised Apples

Saw this recipe from one of my old collection food magazine. It's rather simple and easy to prepare without hash. All you need are some Pork Cutlets(depends on the number of serves), fresh apples and Apple Cider Vinegar. The taste of this dish is rather sweet because of the apples.... you should give it a try.... it will sure make you.... WOW!!!!

Ingredients: (serves 2)
2 Pork Cutlets
1 Teaspoon Olive Oil
1 Tablespoon Brown sugar
20g Butter
1 Apple(halved, cored and cut into wedges)
1 Tablespoon Apple Cider Vinegar

Methods:
1. Season the pork with some pepper, wine and soya sauce. Heat the olive oil in a non-stick frying pan over medium heat and add pork cutlets and cook for 5-7 minutes on each side. Transfer to a plate and cover with foil to rest.
2. Add the brown sugar and butter to the frying pan and melt over low heat. Add apple wedges and cooks, turning occasionally for 3-4 minutes on each side or until golden.
3. Add the cider vinegar and cook for another 1-2 minutes or until heated through.
4. Serve pork cutlet with apples and sauce together with some steam vegetables, fries or mash potatoes. Posted by Picasa

White Christmas!!!!


White Christmas is one of the "treats" that you can usually find during Christmas time. It's made of white chocolate, dried mix fruits and some crispy rice and etc. You do not need to bake them and it very easy to make, just melt the chocolate and stir in all the ingredients then freeze it until harden and cut it into small pieces..... It's rather sweet but very colourful and delicious if you are a white chocolate fans.

Rose N Lavender Fragrant Cookies


Saw this special recipe from one of a dessert book that I borrow from the library. It is actually baking the Rose Petals Cookies but then I try to modify it and make both Rose and Lavender. I personally found that the Lavender cookies is very fragrant and after you had a bite of it, you seems to smell Lavender every now and them. After baking both these cookies my kitchen or even my whole dinning room is fill with aroma scent. You should give it a try..... If you like these two flowers.....is a very special cookies...



Ingredients:
50g Icing Sugar
100g Unsalted Butter(Soften)
¼ Teaspoon Salt
180g Plain Flour
¼ Baking Soda
7g Dried Rose Petal +(½ Tablespoon Ice water)
7g Dried Lavender Petals(½ Tablespoon Ice Water)

Methods:
1. Crush the Dried Rose Petal and remove the bubs then add ice water and soak for 10mins.
2. Add butter, icing sugar and salt in a mixing bowl and beat till light and fluffy.
3. Next sift in the Flour, baking soda, rose petals and use hands to make into a soft dough.
4. Roll the dough on a floured surface into 0.5cm thick and use a heart shape cookie cutter to cut out the shape.
5. Preheat the oven to 170 degree and bake for 20 minutes then lower to 160 degree and bake for another 10 minutes.

Notes:
Oven temperature cannot be too high or the rose will turn colour and spoilt the fragrant.
Rose petals that soak in cold water need not squeeze for the water, just add into the dough.

I get the Dried Rose and Lavender petals from Chinese Medical Hall.

Divided the dough into two portion 1st before adding the Rose and Lavender petals separately into each dough. So that in the Ind i can make two different types of cookies.Posted by Picasa

Bavarois!!!(OREO Mousse Cake......)

Tried to make this OREO Mousse Cake yesterday night. It's pretty easy to make and it taste similar to Cookies N Cream Ice-cream. Maybe is because the Main Ingredient is OREO Chocolate Cookies. It takes about 30 - 40 minutes to prepare and assembly the whole cake. Then you need to re-fridge it for about 1 hr then you can start to decorate the cake with Mirror Gel to give it a shiny effect. After that you can top it with cherry, strawberry or etc... to make it look more presentable. Posted by Picasa
